There is one guide service (so far) that offers guided canyon trips in Colorado: San Juan Mountain Guides. They offer trips for most of the Ouray area canyons, and are highly recommended.
The ACA DOES offer several classes each year for aspiring canyoneers in Colorado. These are usually held around Boulder, Colorado, and covers the basic techniques to descend Colorado's canyons. Again, inquire about these classes at the ACA website.
And finally, when you have learned the basic skills, ask on the Colorado Canyoneering eGroup to find partners and mentors. The number of people exploring Colorado canyons is very small and tight-knit, but they are ALWAYS looking for new people to join them!
